BABY PEAR ALMOND CAKES

3 cups almond meal
2 eggwhites
2 cups pure icing sugar sifted
1 tsp Queen Natural Almond Essence
1 tsp Queen Natural Orange Essence

Preheat oven to 160C. Line a flat baking tray with non stick baking paper. Combine almond meal and 1 cup icing sugar in a bowl and make a well in the centre adding the eggwhites, Queen Orange Essence and Queen Almond Essence. Mix with a spoon until it starts to resemble a dough then use hands to roll into a ball. Roll plum size pieces into your hand and shape like little pears. Insert a clove (stem side up) into the top of each pear. Place pears upright on prepared baking tray a few cm apart and bake on lowest shelf in oven for 15 minutes or until firm to touch. Place remaining 1 cup icing sugar in a bowl and dip hot pears from the oven one at a time into the icing sugar to coat. Place pears in individual paper cases to serve or pack into a small gift box for a delicious gift! Store in an airtight container up to two weeks.
