GLUTEN FREE BREAD AND BUTTER PUDDING

850g gluten-free white bread, buttered, crusts removed
4 eggs
1 cup (250ml) milk
1 cup (250ml) cream
1/2 cup (110g) caster sugar
1 tsp Queen Natural Vanilla Extract
Dust with Queen Vanilla Dusting Sugar
mixed berries to serve (optional)

Serves 6 Prep time 15 minutes Cooking time 45 minutes.

Preheat oven to 180C or 160C fan. Grease an 8-cup ovenproof dish. Cut bread into large cubes. Cover base of prepared dish with half of bread, trimming to fit snugly. Whisk together eggs, milk, cream, caster sugar and Queen Vanilla Extract. Pour half over bread. Top with remaining bread and remaining custard mixture. Set aside for 10 minutes. Place dish in a baking pan. Pour in enough hot water to come halfway up sides of dish. Bake for 45-50 minutes, until custard is set. Dust with Queen Vanilla Dusting sugar and serve with handfuls of berries.
