VANILLA PANACOTTA WITH TROPICAL FRUIT

1 tsp Queen Black Label Vanilla Extract
1 1/2 tsps gelatin , softened and dissolved in
2 tbs warm water
4 tbs caster sugar
200ml milk
300ml light thickened cream
fresh fruit - lychees, mango, star fruit etc

Combine cream, milk and sugar in saucepan. Cook over low heat, stirring constantly to almost boiling point. Remove from heat, cool 10 minutes and add Queen Concentrated Vanilla Extract. Add dissolved gelatin to warmed cream and stir with wooden spoon until well blended. Pour into 8 small (well oiled) moulds and set in fridge overnight.
