LEMON DELICIOUS
50g butter, softened
1 cup castor sugar
2 tbs finely grated lemon rind
4 eggs, separated
1/3 cup self-raising flour, sifted
1 1/2 tsps
Queen Natural Lemon Essence
1 2/3 cups of milk
Pinch of cream of tartar
Preheat oven to 170C using electric beaters. Cream the butter with 1/2 cup of the sugar and the lemon rind. Beat in the egg yolks until combined and then the flour, lemon essence and milk. Beat the egg whites with the cream of tartar until stiff, then beat in the remaining 1/2 cup of sugar until the mixture is glossy. Gently fold the lemon meringue into the butter mixture and pour into oven proof dishes. Stand the dishes in a water bath. Bake in the preheated oven for 45-50 minutes until set and lightly browned. Serve immediately with cream or ice cream.
