STRAWBERRY VANILLA LIQUID YOLKS

125g Strawberry Puree
125g Cream
50g Egg
50g Queen Pure Maple Syrup
1tsp Queen Vanilla Bean Paste

Gelatine Coating
10g gelatine leaves
100g mineral water
10g caster sugar
2 drops Queen Pillar Box Red Queen Single Colours

The red round balls of yummyness!



Mix egg yolks and maple syrup together, in a saucepan heat strawberry puree and cream and to 60 degrees add vanilla paste, pour into 2cm demisphere silicone moulds and bake at 110 degrees for 35-40mins or until just yolks set but still wobbly, then freeze, de mould and with the aid of a toothpick, dip into gelatine coating.



Gelatine Coating
Soak gelatine in cold water, heat mineral water and sugar till sugar dissolved, add drained gelatine leaves and red colour. Use at 50 degrees.
